From Dubai to Manila: Chef Dabo elevates Filipino and Pan-Asian flavors on the global stage

MANILA, PHILIPPINES – Filipino cuisine continues to claim its place on the international dining stage as Guevarra’s by Chef Laudico, in partnership with Nutribullet, unveiled the fourth edition of Taste of the Philippines: A Global Culinary Journey. The series, which champions the artistry and innovation of Filipino chefs, recently spotlighted the culinary excellence of Dubai-based chef David Jezreel Lizardo Pamplona – better known as Chef Dabo.

The event, held on August 18, 2025, at Guevarra’s in San Juan City, celebrated Chef Dabo’s pivotal role in shaping Dubai’s vibrant multicultural food scene. As Managing Director, Head Chef, and Co-Founder of Naimas Café & Bistro, he has built a reputation for blending Filipino flavors with Pan-Asian and Latin American influences. His 13 year career has earned him multiple international accolades, including four Gold Medals at the prestigious Salon Culinaire Dubai and a finalist distinction at the PRO Chef Awards in 2019.

“Dubai is a global dining hub, and Filipino cuisine is so versatile it fits any culture,” says Chef Dabo. “My goal is to make our ingredients as globally recognized as sushi or curry—distinct, respected, and true to their roots.”

Chefs Roland and Jackie Laudico, the husband-and-wife culinary duo behind Guevarra’s, underscored the significance of featuring globally recognized Filipino chefs.  “It’s been our mission from the start to promote Filipino cuisine both here and abroad,” said Chef Roland Laudico. “We’ve participated in countless food festivals to champion our flavors, but this time, we’re highlighting world-class chefs working overseas who share our advocacy. For a limited time, diners at Guevarra’s will experience Chef Dabo’s culinary vision through a special buffet menu. His creations reimagine Filipino staples with cross-cultural artistry, including standout dishes such as Humba-Rum Chicken Empanada, Tiyula Itum Inasal Yakitori, Bistek Saltado, and Shrimp Laing Rebosado with Coconut Wasabi Cream. Each dish pays homage to Filipino heritage while seamlessly embracing international influences.
